New 2-step mode (Upload → PaddleOCR+Overlay) alongside the existing
7-step pipeline. Backend endpoint runs PaddleOCR on the original image
and clusters words into rows/cells directly. Frontend adds a mode
toggle and PaddleDirectStep component.
