fix: LLM Provider erkennt COMPLIANCE_LLM_PROVIDER=ollama

Browse Source 
Ollama als eigener Enum-Wert neben self_hosted, damit die
docker-compose-Konfiguration (ollama) korrekt aufgeloest wird.
