fix: Performance + Hazard-Tabelle Layout

- Uebersicht: Nur noch 2 leichte API-Calls statt 4 (risk-summary statt alle Hazards/Mitigations laden)
- RiskAssessmentTable: Gefaehrdungs-Spalte min-w-[250px] statt max-w-[200px], kein truncate mehr
